Ultrahigh pressure processing technology is widely used in food sterilization, modification and extraction at present. For the particularity of liquid food, a new type of green ultrahigh pressure biological processing technology was proposed. For the novel technology of green and environmental protection, water hydraulic technology was used to replace the traditional hydraulic system, and the liquid food itself was treated as pressure transmission media directly. The market prospect and challenge faced of the technique were summarized and analyzed mainly.
